Roasted Bell Pepper, Onion, and Spinach with Brown Rice

Dry brown rice75 g
Bell pepper150 g
Red onion75 g
Olive oil10 ml
Garlic5 g
Dried herbs (oregano or basil)2 g
Salt1 g
Black pepper0.5 g
Spinach100 g

Instructions

Preheat oven to 200°C (400°F).

Cook the brown rice according to package directions.

While the rice cooks, chop the bell pepper and red onion into bite-sized pieces.

In a large bowl, toss the chopped bell pepper and onion with olive oil, minced garlic, dried herbs, salt, and black pepper until evenly coated.

Spread the vegetables in a single layer on a baking sheet.

Roast for 20-25 minutes, or until the vegetables are tender and slightly caramelized.

Once roasted, transfer the hot vegetables back to the large bowl. Add the fresh spinach and toss gently. The heat from the roasted vegetables will wilt the spinach.

Divide the cooked brown rice between two bowls.

Top the rice with the roasted vegetable and spinach mixture. Serve hot.
