Chicken Breast75 g
Egg120 g
Rice Vermicelli25 g
Spring Onion15 g
Cilantro5 g
Fish Sauce10 ml
Soy Sauce5 ml
Sesame Oil5 ml
Garlic5 g
Chili3 g

Instructions

Step 1: Bring a small pot of water to a boil. Add rice vermicelli and cook for 3-4 minutes until tender. Drain and set aside.

Step 2: Dice the chicken breast into small pieces. Mince the garlic and chili. Thinly slice the spring onion.

Step 3: Heat sesame oil in a non-stick pan over medium heat. Add minced garlic and chili, sauté for 30 seconds until fragrant.

Step 4: Add diced chicken to the pan and cook for 3-4 minutes, stirring occasionally, until browned and cooked through.

Step 5: In a bowl, whisk eggs with fish sauce and soy sauce. Pour egg mixture over the chicken in the pan. Scramble until cooked to your desired consistency.

Step 6: Stir in the cooked rice vermicelli and most of the sliced spring onion. Cook for another minute to combine. Garnish with fresh cilantro and remaining spring onion before serving.
