onion20 g
olive oil5 ml
garlic powder2 g

black pepper1 g

Instructions

Finely chop the onion and slice the mushrooms.

Roughly chop the fresh spinach.

In a medium bowl, whisk the eggs with salt, black pepper, and garlic powder until well combined.

Heat the olive oil in a non-stick skillet over medium heat.

Add the chopped onion and cook until softened, about 3-4 minutes.

Add the sliced mushrooms and cook until they release their liquid and start to brown, about 5-7 minutes.

Stir in the chopped spinach and cook until wilted, about 1-2 minutes.

Pour the whisked eggs evenly over the vegetables in the skillet.

Cook on the stovetop for 5-7 minutes, or until the edges are set and the center is mostly firm.

Cover the skillet for the last 2-3 minutes to help the top set, or finish under a broiler for 1-2 minutes if using an oven-safe skillet (watch carefully).
