Quick Savory Chicken & Egg Porridge (Chao Ga)

Ingredients (Serves 1)

Quick Oats40 g
Lean Ground Chicken100 g
Egg1 large
Ginger10 g
Spring Onion20 g
Fish Sauce5 ml
Water300 ml
Salt1 pinch
Black Pepper1 pinch

Instructions

Finely mince the ginger and thinly slice half of the spring onion for garnish; chop the other half into small pieces.

In a small saucepan, bring 300ml of water to a boil. Add the quick oats and chopped spring onion, stirring well.

In a separate small pan, quickly brown the lean ground chicken over medium-high heat. Season with a pinch of salt and pepper.

Once chicken is cooked, add it to the simmering oats. Stir in the minced ginger and fish sauce.

Simultaneously, soft-boil the egg in a separate pot for 6-7 minutes. Once cooked, peel and halve.

Pour the porridge into a bowl. Top with the soft-boiled egg, sliced spring onion, and a final pinch of black pepper. Serve immediately.
