Carrot50 g
Parsnip50 g
Onion30 g
Olive Oil5 ml
Eggs2 g

Instructions

Wash and peel the carrot and parsnip (2 minutes). Cut the sausage into small pieces (1 minute). Finely chop the onion (2 minutes). Dice the carrot and parsnip into small cubes (5 minutes).

Heat the olive oil in a non-stick pan over medium heat (1 minute). Add the chopped onion, diced carrot, and parsnip. Sauté for 5 minutes until slightly softened.

Add the sausage pieces to the pan and cook for 3 minutes, stirring occasionally, until browned.

Crack the eggs into a bowl, add salt and pepper, and whisk (1 minute). Pour the whisked eggs over the ingredients in the pan.

Cook, stirring gently, for 2 minutes or until the eggs are set but still slightly moist.
