fresh spinach100 g
mushroom100 g
onion30 g
olive oil10 ml
paprika2 g
garlic powder1 g
salt2 g
black pepper1 g

Instructions

Preheat oven to 180°C (350°F).

Finely chop the onion and slice the mushrooms.

Heat olive oil in an oven-safe skillet or dish over medium heat. Add onion and cook until softened, about 3-4 minutes.

Add mushrooms and cook until they release their moisture and start to brown, about 5-7 minutes.

Stir in spinach and cook just until wilted.

Season the vegetables with paprika, garlic powder, salt, and black pepper.

In a bowl, whisk the eggs with a pinch of salt and pepper.

Pour the whisked eggs evenly over the vegetables in the skillet.
