Cottage Cheese300 g
Eggs6
Tomatoes200 g
Peppers150 g
Olive Oil10 ml
Herbs10 g
Salt2 g
Pepper2 g

Instructions

Finely chop the tomatoes and peppers. (5 minutes)

Heat the olive oil in a non-stick pan over medium heat. Add the chopped tomatoes and peppers and sauté for 4 minutes until slightly softened. (4 minutes)

While the vegetables cook, whisk together the eggs and cottage cheese in a bowl. Season with salt, pepper, and chopped fresh herbs. (1 minute)

Pour the egg and cottage cheese mixture into the pan with the sautéed vegetables. Stir gently and cook, stirring occasionally, for 6 minutes until the scramble is set but still moist. (6 minutes)

Divide the scramble between two plates and serve immediately.
