Quick Chicken & Cheese Quesadilla

- Bell Pepper50 g
- Cheddar Cheese20 g
- Bell Pepper50 g
- Olive Oil2.5 ml
- Whole Wheat Tortilla40 g
Instructions

Step 1: Dice the bell pepper into small pieces. If your chicken breast isn't already shredded, shred it.

Step 2: Lightly brush one side of the whole wheat tortilla with olive oil.

Step 3: Place the tortilla, oil-side down, in a non-stick skillet over medium heat. Sprinkle half of the cheddar cheese over one half of the tortilla.

Step 4: Evenly distribute the cooked chicken breast and diced bell pepper over the cheese.

Step 5: Sprinkle the remaining cheese over the chicken and vegetables. Once the cheese begins to melt and the tortilla is lightly browned on the bottom (approx. 2-3 minutes), fold the empty half of the tortilla over the filling.
