Ingredients (Serves 2)

Egg White150 g
Egg1.5 large
Chicken Breast40 g
Spinach75 g
Rye Bread30 g
Olive Oil2.5 ml
Salt0.5 pinch
Black Pepper0.3 tsp

Instructions

1. Dice the cooked chicken breast into small pieces. Roughly chop the fresh spinach.

2. In a bowl, whisk the egg whites and whole eggs together. Season with a pinch of salt and 0.25 tsp of black pepper.

3. Heat the olive oil in a non-stick pan over medium heat. Add the diced chicken and cook for 1-2 minutes.

4. Add the spinach to the pan and cook for 1-2 minutes until wilted.

5. Pour in the whisked egg mixture. As the eggs begin to set, gently push them from the edges towards the center with a spatula.

6. Continue cooking until the scramble is set but still moist.

7. Serve immediately with a slice of whole-grain rye bread on the side.
