Egg White4 large
Ham60 g
Spinach50 g
Olive Oil2.5 ml
Salt0.5 tsp
Black Pepper0.3 tsp

Instructions

Dice the ham into small pieces. Wash and roughly chop the spinach.

In a bowl, whisk together the eggs and egg whites with salt and pepper until well combined.

Heat olive oil in a non-stick pan over medium heat. Add diced ham and cook for 2-3 minutes until lightly browned.

Add spinach to the pan and sauté for 1-2 minutes until wilted.

Pour the egg mixture into the pan. Cook, stirring gently with a spatula, until the eggs are set but still moist, about 3-5 minutes.
