Pan-Seared Steak with Roasted Potatoes and Green Beans

Ingredients (Serves 2)

Sirloin Steak (raw)200 g
Potato150 g
Green Beans100 g
Olive Oil5 ml
Garlic (cloves)1 pcs
Fresh Rosemary3 g
Fresh Thyme3 g
Salt2 g
Black Pepper1 g
Dairy-Free Butter Alternative5 g

Instructions

Pat the steaks dry with paper towels. Season generously with salt and pepper.

Finely chop the fresh rosemary and thyme. Mince the garlic.

In a small bowl, combine 5 ml olive oil, half of the chopped herbs, minced garlic, salt, and pepper. Rub this mixture all over the steaks. Let the steaks marinate at room temperature for at least 15-20 minutes (or refrigerate for longer if time allows).

Preheat oven to 200°C (400°F).

Wash and cut the potatoes into wedges or cubes. Toss them in a bowl with 5 ml olive oil, the remaining chopped herbs, salt, and pepper.

Spread the seasoned potatoes in a single layer on a baking sheet.

Roast for 20-25 minutes, flipping halfway through, until golden brown and tender.

While the potatoes are roasting, trim the ends off the green beans. Toss them in a bowl with 5 ml olive oil, salt, and pepper.

During the last 10 minutes of potato roasting, add the green beans to the baking sheet with the potatoes.

Heat a heavy skillet or cast-iron pan over high heat until smoking slightly.

Add the marinated steaks to the hot pan. Sear for 3-4 minutes per side for medium-rare, or adjust time for desired doneness. For extra flavor, add the dairy-free butter alternative and any remaining marinade herbs/garlic to the pan during the last minute of cooking, spooning the melted butter over the steaks.

Remove steaks from the pan and let rest on a cutting board for 5-10 minutes before slicing.

Serve the sliced steak with the roasted potatoes and green beans.
