Pan-Seared Sirloin with Sautéed Greens and Quinoa

Ingredients (Serves 2)

Sirloin steak (raw weight)400 g
Dry quinoa200 g
Water or vegetable broth400 ml
Fresh spinach100 g
Bell pepper (any color)150 g
Onion100 g
Garlic4 cloves
Olive oil30 ml
Fresh rosemary sprig1 pcs
Fresh thyme sprig1 pcs
Salt2 g
Black pepper1 g

Instructions

Rinse the quinoa under cold water. In a medium saucepan, combine the rinsed quinoa and water or broth. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes, or until liquid is absorbed and quinoa is cooked. Let stand for 5 minutes, then fluff with a fork.

Pat the sirloin steak dry and season generously with salt and pepper.

Dice the bell pepper and onion. Thinly slice the garlic.

Heat 15ml of olive oil in a large skillet over medium-high heat. Add the steak and sear for 3-5 minutes per side for medium-rare, or to your desired doneness. Add the rosemary and thyme sprigs to the pan during searing for flavor.

Remove the steak from the pan and let rest on a cutting board for 5-10 minutes.

While the steak rests, add the remaining 15ml of olive oil to the same skillet over medium heat.

Add the diced onion and bell pepper and cook until slightly softened, about 5-7 minutes.

Add the sliced garlic and cook for 1 minute until fragrant.

Add the fresh spinach to the skillet and cook, stirring, until wilted.

Slice the rested steak against the grain.

Divide the cooked quinoa, sautéed vegetables, and sliced steak between two plates. Serve immediately.
