Pan-Seared Chicken with Lemon-Garlic Broccoli and Mushrooms

Ingredients (Serves 1)

raw chicken breast260 g
broccoli florets300 g
mushroom150 g
olive oil20 ml
lemon1 pcs
garlic powder3 g
salt2 g
black pepper2 g

Instructions

Pat the chicken breast dry with paper towels.

Season the chicken generously on all sides with salt, black pepper, and garlic powder.

Slice the mushrooms and cut any larger broccoli florets into smaller pieces.

Squeeze the juice from the lemon; set aside.

Heat half of the olive oil (10 ml) in a large skillet over medium-high heat.

Add the seasoned chicken breast and sear for 5-7 minutes per side, or until golden brown and cooked through (internal temperature reaches 74°C or 165°F). Remove chicken from the skillet and set aside to rest.

Add the remaining olive oil (10 ml) to the same skillet.

Add the broccoli florets and mushrooms and sauté, stirring occasionally, for 7-10 minutes, or until tender-crisp and slightly browned.

Add the lemon juice to the vegetables and stir to deglaze the pan and coat the vegetables.

Slice the rested chicken breast.

Serve the sliced chicken alongside the lemon-garlic sautéed broccoli and mushrooms.
