Mediterranean Tofu Scramble with Whole Grain Toast

Tofu175 g
Whole Grain Bread25 g
Bell Pepper40 g
Spinach30 g
Onion15 g
Olive Oil4 g
Soya Sauce4 ml
Nutritional Yeast4 g
Turmeric0.5 tsp
Black Pepper0.3 tsp
Salt0.3 tsp

Instructions

Press the tofu to remove excess water, then crumble it into small pieces.

Dice the bell pepper and onion. Roughly chop the spinach.

Heat olive oil in a non-stick pan over medium heat. Add diced onion and bell pepper, sauté for 3 minutes until softened.

Add crumbled tofu, turmeric, salt, and black pepper. Stir well to combine and cook for 3-4 minutes, breaking up any large tofu clumps.

Stir in spinach, soya sauce, and nutritional yeast. Cook for another 1-2 minutes until spinach wilts.

Toast the whole grain bread slices until golden brown. Serve the tofu scramble alongside the toast.
