Mediterranean Tofu Scramble with Spinach & Herbs

Tofu225 g
Spinach75 g
Cherry Tomato75 g
Red Onion20 g
Olive Oil5 g
Nutritional Yeast7.5 g
Turmeric0.5 g
Black Salt0.5 g
Dried Oregano0.5 g
Black Pepper0.5 g

Instructions

Drain and press the tofu to remove excess water. Crumble it into a bowl.

Dice the red onion and halve the cherry tomatoes. Chop the spinach coarsely.

Heat olive oil in a non-stick pan over medium heat. Add red onion and sauté for 2 minutes until softened.

Add crumbled tofu, turmeric, black salt, dried oregano, and black pepper. Sauté for 5-7 minutes, stirring occasionally, until tofu is heated through and slightly browned.

Stir in spinach and cherry tomatoes. Cook for another 2-3 minutes until spinach wilts and tomatoes soften slightly. Remove from heat.

Stir in nutritional yeast. Serve immediately.
