Mediterranean Spinach and Feta Scramble

Ingredients (Serves 1)

Eggs150 g
Spinach50 g
Feta40 g
Onion20 g
Garlic5 g
Olive Oil5 ml
Salt1 g
Black Pepper0.5 g

Instructions

Finely chop the onion (20 g) and mince the garlic (5 g). Wash the spinach (50 g) and roughly chop it.

Heat the olive oil (5 ml) in a non-stick pan over medium heat for 1 minute.

Add the chopped onion and minced garlic to the pan and sauté until softened, about 3 minutes.

Add the chopped spinach to the pan and cook until wilted, about 2 minutes.

While the spinach wilts, whisk the eggs (150 g) in a bowl with salt (1 g) and black pepper (0.5 g). Crumble the feta cheese (40 g).

Pour the whisked eggs into the pan with the vegetables. Stir gently as the eggs cook, about 2 minutes.

Once the eggs are mostly set but still slightly wet, sprinkle the crumbled feta over the top. Cook for another 1 minute until the cheese is slightly softened.
