Mediterranean Smoked Salmon & Dill Scramble

- Onion40 g
- Olive Oil5 ml
- Salt1 g
- Pepper0.5 g
- Egg Whites300 g
- Salmon80 g
- Dill5 g
Instructions

Finely chop the onion (40g) and dill (5g). Roughly chop the spinach (100g). Slice the smoked salmon (80g) into smaller pieces. (7 minutes)

Heat the olive oil (5ml) in a non-stick pan over medium heat. Add the chopped onion and sauté for 3 minutes until softened.

Add the chopped spinach to the pan and cook for 2 minutes until wilted.

Whisk the egg whites (300g) with salt (1g) and pepper (0.5g). Pour into the pan with the vegetables.

As the egg whites begin to set, add the smoked salmon pieces and chopped dill. Gently scramble for 5 minutes until the egg whites are cooked through and the salmon is warmed. (Total cook time: 3 + 2 + 5 = 10 minutes)
