Bell Pepper80 g
Onion30 g
Spinach60 g
Feta Cheese35 g
Olive Oil5 g
Whole Wheat Bread30 g
Cottage Cheese50 g

Instructions

Finely chop the bell pepper and onion. Roughly chop the spinach. (3 minutes)

In a bowl, whisk together egg whites, whole egg, and cottage cheese. Season with a pinch of salt and pepper. (1 minute)

Heat olive oil in a non-stick pan over medium heat. Add chopped bell pepper and onion; sauté for 2 minutes until slightly softened. (2 minutes)

Add spinach to the pan and cook for 1 minute until wilted. (1 minute)

Pour the egg mixture into the pan. As the eggs begin to set, gently push them from the edges to the center. Sprinkle with crumbled feta cheese. Continue cooking for 2 minutes or until eggs are cooked to your liking. (2 minutes)
