Egg2 whole
Egg White2 medium
Spinach70 g
Feta Cheese15 g
Olive Oil5 ml
Whole Wheat Bread40 g
Salt1 pinch
Black Pepper1 pinch

Instructions

Slice the whole wheat bread and set aside to toast later.

Roughly chop the fresh spinach.

Heat the olive oil in a non-stick pan over medium heat.

Add the chopped spinach to the pan and sauté for 2-3 minutes until wilted.

In a bowl, whisk together the whole eggs and egg whites with a pinch of salt and pepper.

Pour the egg mixture into the pan with the spinach. Scramble for 2-3 minutes, stirring occasionally, until cooked to your desired consistency.

Crumble the feta cheese over the scramble. Toast the bread until golden brown (about 2 minutes).

Serve the Mediterranean scramble immediately with the whole wheat toast.
