Almond Flour16.6 g
Cream Cheese20 g
Sour Cream10 g
Smoked Salmon13.3 g
Olive Oil1.3 ml
Cucumber50 g
Dill5 g
Chives5 g
Lemon Juice5 ml
Salt0.2 tsp
Black Pepper0.1 tsp

Instructions

Step 1: Preheat oven to 160°C. In a bowl, combine almond flour, 1ml olive oil, and a pinch of salt. Mix until a dough forms. Roll out thinly between two sheets of parchment paper and cut into cracker shapes. Bake for 15 minutes, or until golden and crisp. Let cool.

Step 2: While crackers bake, finely chop fresh dill and chives. In a small bowl, combine cream cheese, sour cream, lemon juice, half of the chopped dill and chives, a pinch of salt, and black pepper. Mix until smooth and well combined.

Step 3: Slice the cucumber into 0.5 cm thick rounds. Arrange them on a serving platter.

Step 4: Spread a generous dollop of the cream cheese mixture onto each cucumber slice. Top with a piece of smoked salmon.

Step 5: Garnish the cucumber bites with the remaining fresh dill and chives. Serve alongside the homemade almond crackers.
