Soy Sauce7 ml
Sesame Oil1 ml
Garlic3 g
Ginger3 g
Lettuce100 g
Mayonnaise7 g
Kimchi13 g
Sriracha2 ml
Radish30 g
Rice Vinegar5 ml
Green Onion7 g
Salt1 pinch
Black Pepper0.5 pinch

Instructions

Thinly slice the beef sirloin against the grain into bite-sized pieces. Mince the garlic and grate the ginger.

In a bowl, combine the beef, soy sauce, sesame oil, minced garlic, and grated ginger. Mix well and let marinate for at least 15 minutes while you prepare other components.

For the quick-pickled radishes: Thinly slice the radishes. In a small bowl, combine sliced radishes with rice vinegar and a pinch of salt. Let sit for at least 10 minutes, stirring occasionally.

For the spicy kimchi aioli: In a small bowl, combine mayonnaise, finely chopped kimchi, and Sriracha. Mix until well combined. Adjust Sriracha to your preferred spice level.

Wash and separate the lettuce leaves. Thinly slice the green onions for garnish.

Heat a large skillet or wok over high heat. Add a splash of olive oil (from budget) if needed. Once very hot, add the marinated beef in a single layer, working in batches if necessary to avoid overcrowding. Sear for 2-3 minutes per side until beautifully browned and cooked to your liking. Remove beef and set aside to rest for 3 minutes.

If any marinade remains in the bowl, add it to the hot skillet and reduce slightly for 1-2 minutes until it thickens into a glaze.

To assemble the wraps: Place a portion of seared beef into a lettuce cup. Top with a spoonful of quick-pickled radishes (drained) and a drizzle of the spicy kimchi aioli. Garnish with sliced green onions. Serve immediately.
