Japanese-Style Scrambled Eggs with Smoked Salmon and Sautéed Spinach

Smoked Salmon50 g
Spinach100 g
Olive Oil7.5 ml
Soy Sauce5 ml
Sesame Oil2.5 ml
Green Onion1 stalk

Instructions

In a bowl, whisk the eggs with half of the soy sauce and a pinch of salt and pepper until well combined.

Heat half of the olive oil in a non-stick pan over medium heat. Add the spinach and sauté until wilted, about 2-3 minutes. Remove from pan and set aside.

Add the remaining olive oil to the pan. Pour in the whisked eggs and scramble gently until just set but still moist, about 3-4 minutes.

Gently fold the sautéed spinach into the scrambled eggs.

Arrange the scrambled eggs on plates. Top with slices of smoked salmon. Drizzle with sesame oil and remaining soy sauce. Garnish with sliced green onions before serving.
