Japanese Savory Tofu Scramble with Shiitake Mushrooms and Spinach

Ingredients (Serves 2)

Tofu250 g
Shiitake Mushroom100 g
Spinach100 g
Green Onion1 stalk
Soy Sauce1.5 tbsp
Nutritional Yeast1 tbsp
Sesame Oil0.5 tbsp
Olive Oil1.5 tbsp
Garlic1 clove
Salt0.3 tsp
Black Pepper0.1 tsp

Instructions

Drain and press the tofu to remove excess water. Crumble it into a bowl.

Thinly slice the shiitake mushrooms. Mince the garlic. Slice the green onions, separating white and green parts.

In a large non-stick pan, heat the olive oil over medium heat. Add minced garlic and the white parts of the green onions, sauté for 1 minute until fragrant.

Add the shiitake mushrooms and cook for 3-5 minutes until softened.

Add the crumbled tofu to the pan. Stir in the soy sauce, nutritional yeast, and salt. Cook, stirring occasionally, for 5-7 minutes until the tofu is heated through and slightly browned.

Stir in the spinach and cook until wilted, about 1-2 minutes.

Remove from heat, drizzle with sesame oil, and garnish with the green parts of the green onions and a pinch of black pepper. Serve immediately.
