Finely chop the spring onion and spinach.

In a bowl, whisk the eggs with a pinch of salt and pepper.

Heat olive oil in a non-stick pan over medium heat. Add spring onion and sauté for 1 minute until fragrant.

Add spinach and cook for 2 minutes until wilted.

Pour the whisked eggs into the pan. As the edges set, gently push the cooked egg towards the center, allowing uncooked egg to flow underneath, for about 1 minute.

Spread the cottage cheese evenly over one half of the omelet.

Fold the omelet in half and cook for another 1-2 minutes until the eggs are set to your liking. Meanwhile, toast the rye bread.

Serve the omelet immediately with the toasted rye bread.
