Preheat a non-stick pan over medium-low heat. In a separate heavy-bottomed pan, lay out the beef bacon strips without overlapping. Place over medium heat.

While bacon renders, crack eggs into a bowl. Whisk vigorously for 2 minutes until light and frothy, incorporating air for a creamy texture.

Add 0.5 tbsp of ghee to the non-stick pan. Pour in the whisked eggs. Let sit undisturbed for 30 seconds until edges begin to set.

Using a heat-proof rubber spatula, gently push the cooked egg from the edges towards the center, tilting the pan to allow uncooked egg to flow underneath. Repeat this folding motion for 3-4 minutes, keeping the heat low to prevent browning. The goal is large, creamy curds.

Continue rendering bacon in its pan, turning occasionally, until deeply golden and crisp (approx. 8-10 minutes). Remove bacon to a wire rack to drain and crisp further. Pour off excess bacon fat, reserving if desired.
