Mushrooms80 g
Leeks50 g
Olive Oil5 ml

Oregano0.5 g

Instructions

Wash and thinly slice the mushrooms (80 g) and leeks (50 g). This takes about 3 minutes.

Heat olive oil (5 ml) in a non-stick pan over medium heat (1 minute).

Add sliced mushrooms and leeks to the pan and sauté until softened, about 4 minutes.

While vegetables cook, whisk together eggs (100 g) and egg whites (90 g) in a bowl. Season with salt (1 g), pepper (0.5 g), and oregano (0.5 g). This takes about 1 minute.

Pour the egg mixture over the sautéed vegetables in the pan. Cook, stirring occasionally, until the eggs are set but still moist, about 3 minutes.
