High-Protein Zucchini Fritters with Yogurt

- Flour (whole wheat)25 g
- Salt1 g
- Pepper0.5 g
- Olive Oil6 ml
- Zucchini170 g
- Egg Whites115 g
- Protein Powder (whey, unflavored)35 g
- Dill (fresh)5 g
- Parsley (fresh)5 g
Instructions

Grate the zucchini (1 minute). Place grated zucchini in a fine-mesh sieve or wrap in a clean kitchen towel and squeeze out as much excess water as possible (2 minutes).

In a medium bowl, whisk together the egg whites (1 minute). Add the squeezed zucchini, whole wheat flour, whey protein powder, chopped fresh dill and parsley, salt, and pepper. Mix until just combined (2 minutes).

Heat the olive oil in a non-stick skillet over medium heat (1 minute). Spoon the batter into the skillet, forming 2-3 small fritters (1 minute).
