Egg Whites240 ml
Egg50 g
Chicken Breast112 g
Spinach30 g
Red Bell Pepper37 g
Onion15 g
Olive Oil5 ml
Whole Wheat Bread30 g
Avocado40 g
Salt1 g
Black Pepper0.5 g

Instructions

Dice the chicken breast into small pieces. Chop the bell pepper and onion. Mince the garlic.

Heat olive oil in a non-stick pan over medium heat. Add diced chicken breast and cook for 5-7 minutes until browned and cooked through. Remove chicken and set aside.

In the same pan, add bell pepper and onion. Sauté for 3-4 minutes until softened.

Add spinach and cook until wilted, about 1-2 minutes.

In a bowl, whisk egg whites and whole egg together. Season with salt and black pepper.

Pour egg mixture into the pan with vegetables. Scramble until cooked to your desired consistency, about 2-3 minutes.

Fold the cooked chicken back into the scramble.
