Firm tofu200 g
Fresh spinach50 g
Yellow onion40 g
Garlic5 g
Olive oil10 ml
Dairy-free protein powder (unflavored or savory)10 g
Water or dairy-free milk15 ml
Salt1 g
Black pepper0.5 g
Turmeric powder (optional, for color)0.5 g

Instructions

Press the firm tofu to remove excess water, then crumble it into small pieces using your hands or a fork.

Finely dice the yellow onion and mince the garlic.

Heat the olive oil in a non-stick pan over medium heat.

Add the diced onion and cook until softened, about 3-4 minutes.

Add the minced garlic and cook for another minute until fragrant.

Stir in the fresh spinach and cook until wilted, about 2-3 minutes.

Add the crumbled tofu to the pan. Season with salt, black pepper, and optional turmeric powder.

Cook, stirring occasionally, for 5-7 minutes, allowing the tofu to heat through and absorb the flavors.

In a small bowl, whisk together the dairy-free protein powder with the water or dairy-free milk until smooth.

Pour the protein mixture over the tofu scramble and stir well to combine. Cook for another 1-2 minutes until the protein is incorporated and the scramble is heated through.
