Firm tofu200 g
Fresh spinach50 g
Bell peppers (any color)75 g
Onion40 g
Garlic5 g
Olive oil7.5 ml
Nutritional yeast (optional, for cheesy flavor)5 g
Turmeric powder (for color)1 g
Salt1 g
Black pepper0.5 g

Instructions

Press the tofu to remove excess water. Crumble it into a bowl.

Finely chop the onion and bell peppers. Mince the garlic.

Heat the olive oil in a non-stick pan or skillet over medium heat.

Add the chopped onion and bell peppers and sauté until softened, about 5-7 minutes.

Add the minced garlic and turmeric powder and cook for another minute until fragrant.

Add the crumbled tofu to the pan. Stir gently to combine with the vegetables.

Season with salt and black pepper. If using, stir in the nutritional yeast.

Cook, stirring occasionally, for 5-8 minutes, allowing the tofu to heat through and slightly brown.

Stir in the fresh spinach and cook until wilted, about 1-2 minutes.
