- Bell Pepper42.5 g
- Spinach42.5 g
- Bell Pepper42.5 g
- Olive Oil6 ml
- Black Salt0.3 tsp
- Black Pepper0.1 tsp
- Nutritional Yeast16 g
- Avocado47.5 g
- Turmeric0.5 tsp
Instructions

Finely chop the onion and bell pepper. Roughly chop the spinach. Crumble the extra-firm tofu into small pieces.

Heat olive oil in a large non-stick pan over medium heat. Add chopped onion and bell pepper, sauté for 2-3 minutes until slightly softened.

Add crumbled tofu, turmeric, black salt, and black pepper to the pan. Cook for 2-3 minutes, stirring occasionally, until tofu is heated through and slightly browned.

Stir in the nutritional yeast and spinach. Cook for another 1 minute until spinach wilts.

Halve, pit, and dice the avocado. Serve the tofu scramble immediately, topped with diced avocado.
