Medium Onion0.3
Frozen Mixed Vegetables0.4 cup
Fresh Spinach0.8 cup
Olive Oil0.4 tbsp
Garlic0.5 clove
Dairy-Free Soy Sauce0.4 tbsp
Salt0.1 tsp
Black Pepper0.1 tsp

Instructions

Press excess water from the tofu, then crumble it into a bowl.

In a separate bowl, whisk the large eggs with a pinch of salt and pepper.

Heat olive oil in a large non-stick skillet over medium heat.

Add diced onion and minced garlic, cook until softened, about 3-4 minutes.

Add frozen mixed vegetables and cook for 5-7 minutes, or until heated through.

Add the crumbled tofu to the skillet and cook, stirring occasionally, for 5-7 minutes, until slightly browned.

Pour the whisked eggs over the tofu and vegetables. Scramble gently until the eggs are cooked through.

Stir in the cooked rice and fresh spinach. Cook until spinach is wilted.
