High Protein Tofu and Vegetable Scramble with Rice

Ingredients (Serves 2)

Firm tofu300 g
Large eggs2 pcs
Liquid egg whites100 g
Olive oil8 g
Yellow onion50 g
Red bell pepper50 g
Fresh spinach100 g
Nutritional yeast15 g
Garlic powder2 tsp
Salt0.5 tsp
Black pepper0.3 tsp
Cooked white rice80 g

Instructions

Drain the tofu and crumble it into a bowl using your hands or a fork. Season with nutritional yeast, garlic powder, salt, and black pepper.

Whisk the large eggs and liquid egg whites in a separate bowl.

Heat olive oil in a non-stick pan over medium heat.

Add diced yellow onion and red bell pepper and sauté until softened, about 5-7 minutes.

Add the crumbled seasoned tofu to the pan and cook, stirring occasionally, for about 5 minutes until some moisture has evaporated.

Pour the whisked eggs and egg whites over the tofu and vegetables. Stir gently as they cook, scraping the bottom of the pan, until the scramble is cooked through but still moist.

Stir in the fresh spinach during the last 1-2 minutes until wilted.

Serve the scramble immediately alongside the cooked white rice.
