High Protein Tofu and Egg Scramble with Spinach

Ingredients (Serves 2)

Firm tofu240 g
Liquid egg whites480 g
Cooked white or brown rice180 g
Fresh spinach180 g
Yellow onion95 g
Olive oil12 g
Salt1 tsp
Black pepper0.5 tsp

Instructions

Press excess water out of the tofu and crumble it into a bowl.

Dice the yellow onion.

Heat olive oil in a large non-stick skillet over medium heat.

Add the diced onion and cook until softened, about 3-5 minutes.

Add the crumbled tofu to the skillet and cook, stirring occasionally, for about 5-7 minutes until slightly browned.

Pour in the liquid egg whites and add the spinach. Season with salt and pepper.

Scramble the mixture, stirring frequently, until the egg whites are cooked through and the spinach is wilted.

Stir in the cooked rice and heat through.

Divide the scramble between two plates and serve immediately.
