High-Protein Summer Vegetable Scramble

Egg2 large
Egg White1 cup
Chicken Breast2 oz
Olive Oil0.5 tablespoon
Bell Pepper0.5 cup
Spinach1 cup
Onion0.3 cup
Whole Wheat Bread1 slice
Salt0.3 teaspoon
Black Pepper0.1 teaspoon

Instructions

Step 1: Dice the chicken breast, bell pepper, and onion. Roughly chop the spinach.

Step 2: Heat olive oil in a non-stick skillet over medium heat. Add diced chicken and cook for 5-7 minutes until browned and cooked through. Remove chicken and set aside.

Step 3: Add bell pepper and onion to the same skillet and sauté for 3-4 minutes until softened.

Step 4: Whisk eggs and egg whites in a bowl with salt and pepper. Pour into the skillet with the vegetables. Add spinach and cooked chicken.

Step 5: Scramble the mixture for 2-3 minutes until eggs are set. Serve immediately with a slice of whole wheat toast.
