Large eggs4 pcs
Liquid egg whites200 g
Fresh spinach200 g
Yellow onion100 g
Red bell pepper75 g
Olive oil5 ml
Garlic powder4 g
Nutritional yeast15 g
Salt1 tsp
Black pepper1 tsp

Instructions

Finely chop the yellow onion and red bell pepper.

Heat olive oil in a large non-stick skillet over medium heat.

Add onion and bell pepper and sauté for 5-7 minutes until softened.

Add spinach and garlic powder, cooking until spinach is wilted, about 2-3 minutes.

In a bowl, whisk together the large eggs and liquid egg whites. Season with salt and black pepper.

Pour the egg mixture into the skillet with the vegetables.

As the eggs begin to set, sprinkle the nutritional yeast over the top.

Gently push the cooked portions towards the center, allowing the uncooked egg to flow underneath. Continue scrambling until the eggs are cooked through but still moist.
