High Protein Spinach and Vegetable Frittata

Ingredients (Serves 2)

Large eggs4 pcs
Liquid egg whites1.8 cup
Olive oil0.5 tbsp
Fresh spinach2 cup
Yellow onion0.5 medium
Red bell pepper1 medium
Nutritional yeast2 tbsp
Salt0.3 tsp
Black pepper0.1 tsp

Instructions

Preheat oven to 190°C (375°F). If using an oven-safe skillet, heat the olive oil in the skillet over medium heat. If not, prepare an oven-safe dish by lightly greasing it.

Finely chop the yellow onion and red bell pepper. Add them to the skillet (or a separate pan if not using an oven-safe skillet) and sauté until softened, about 5-7 minutes.

Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Season the vegetables with a pinch of salt and pepper.

In a medium bowl, whisk together the large eggs and liquid egg whites. Stir in the nutritional yeast, remaining salt, and pepper.

If using a separate pan for vegetables, transfer the cooked vegetables into the prepared oven-safe dish. Pour the egg mixture evenly over the vegetables.

Transfer the skillet or dish to the preheated oven.

Bake for 20-25 minutes, or until the center is set and the edges are golden brown.

Let cool slightly before slicing into 2 equal portions and serving.
