High Protein Spinach and Vegetable Frittata

- Red bell pepper1 medium

- Liquid egg whites1.8 cup
- Nutritional yeast2 tbsp
Instructions

Preheat oven to 190°C (375°F). If using an oven-safe skillet, heat the olive oil in the skillet over medium heat. If not, prepare an oven-safe dish by lightly greasing it.

Finely chop the yellow onion and red bell pepper. Add them to the skillet (or a separate pan if not using an oven-safe skillet) and sauté until softened, about 5-7 minutes.

Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Season the vegetables with a pinch of salt and pepper.
