High-Protein Scrambled Eggs with Spring Greens & Feta

Large Egg3 unit
Spinach40 g
Spring Onion7.5 g
Olive Oil2.5 ml
Feta Cheese15 g
Whole-grain Bread20 g

Instructions

Slice the spring onion thinly and roughly chop the spinach.

In a bowl, whisk eggs with a pinch of salt and pepper.

Heat olive oil in a non-stick pan over medium heat for 1 minute.

Add spring onion and sauté for 1 minute until fragrant.

Pour in the whisked eggs. As the eggs begin to set (about 2 minutes), gently push them from the edges towards the center.

Add the chopped spinach and continue cooking for 2-3 minutes, stirring occasionally, until the spinach is wilted and eggs are cooked to your liking.

Crumble the feta cheese over the eggs in the last minute of cooking.

Serve immediately with the whole-grain bread.
