High-Protein Scrambled Eggs with Spinach & Rye Toast

Ingredients (Serves 1)

Egg1 large
Egg White2 large
Spinach100 g
Cottage Cheese150 g
Rye Bread50 g
Olive Oil2 g
Salt1 pinch
Black Pepper1 pinch

Instructions

Step 1: Heat olive oil in a non-stick pan over medium heat.

Step 2: Add spinach and sauté until wilted, about 2-3 minutes. Remove spinach and set aside.

Step 3: In a bowl, whisk the whole egg and egg whites with salt and pepper.

Step 4: Pour egg mixture into the same pan. As eggs begin to set, gently push them from the edges towards the center.

Step 5: Fold in the cooked spinach and cottage cheese just before the eggs are fully set. Cook for another 1-2 minutes until heated through.

Step 6: Serve immediately with the rye bread.
