Egg White2 large
Cottage Cheese50 g
Spinach75 g
Whole Wheat Bread1.5 slice
Olive Oil0.3 tbsp
Salt0.5 tsp
Black Pepper0.3 tsp

Instructions

Slice the whole wheat bread and set aside.

Wash the spinach thoroughly.

In a medium bowl, whisk together the eggs and egg whites. Season with salt and pepper.

Heat olive oil in a non-stick skillet over medium heat.

Add the spinach to the skillet and sauté until wilted, about 2-3 minutes.

Pour the egg mixture into the skillet with the spinach. Stir gently as the eggs begin to set.

Once the eggs are mostly set but still moist, gently fold in the cottage cheese.

Continue to cook for another minute until the cottage cheese is warmed through. Do not overcook.
