High-Protein Scrambled Eggs with Spinach & Cottage Cheese

Salt0.5 g
Black Pepper0.2 g

Instructions

Whisk eggs and egg whites in a bowl with a pinch of salt and pepper.

Heat olive oil in a non-stick pan over medium heat. Add spinach and cook until wilted (about 2 minutes).

Pour in the egg mixture. As the eggs set, gently push cooked portions from the edges to the center, tilting the pan to allow uncooked egg to flow underneath.

When eggs are mostly set but still slightly moist, stir in cottage cheese until just combined. Remove from heat.

Serve immediately with whole grain rye bread.
