High-Protein Scrambled Eggs with Spinach and Whole-Grain Toast

Egg white1 pcs
Spinach100 g
Olive oil2.5 ml
Whole-grain bread40 g
Salt1 pinch
Black pepper1 pinch

Instructions

Crack 4 eggs into a bowl, add 2 egg whites from separate eggs. Whisk well with a pinch of salt and pepper for 2 minutes.

Heat 5 ml of olive oil in a non-stick pan over medium heat for 1 minute.

Add 200 grams of fresh spinach to the pan and sauté for 2 minutes until wilted.

Pour the whisked eggs over the spinach. Let it set for 30 seconds, then gently push the cooked egg from the edges towards the center, allowing uncooked egg to flow underneath. Continue this process for 4-5 minutes until the eggs are cooked to your desired consistency.

While eggs are cooking, toast 2 slices of whole-grain bread for 3 minutes.

Serve the scrambled eggs immediately alongside the toasted bread. Total prep time: 8 minutes. Total cook time: 10 minutes.
