Step 1: Whisk the eggs and egg whites in a bowl with a pinch of salt and pepper.

Step 2: Heat the olive oil in a non-stick pan over medium heat. Add the spinach and sauté until wilted, about 2 minutes. Remove excess water.

Step 3: Pour the egg mixture into the pan with the spinach. As the eggs begin to set, gently push them from the edges towards the center, creating large, soft curds. Crumble in the feta cheese and continue cooking until just set but still moist, about 3-4 minutes.
