Instructions

Crack the eggs into a bowl and whisk vigorously for 1 minute until well combined and slightly frothy. Season with salt and pepper.

Heat the olive oil in a non-stick pan over medium heat for 1 minute.

Add the spinach to the pan and sauté for 1 minute until wilted.

Pour the whisked eggs into the pan with the spinach. Let them set for 1 minute, then gently push the cooked edges towards the center, allowing the uncooked egg to flow underneath. Continue cooking and stirring for 3-4 minutes until the eggs are cooked to your desired consistency.

While eggs are cooking, slice the avocado for serving (1 minute).

Serve the scrambled eggs immediately with sliced avocado on the side.
