High-Protein Scrambled Eggs with Sautéed Spinach and Apple

Ingredients (Serves 2)

Egg2.5 unit
Lactose-Free Protein Powder12.5 g
Spinach40 g
Olive Oil2.5 ml
Apple75 g
Salt1 pinch
Black Pepper1 pinch

Instructions

Wash the spinach thoroughly (1 minute).

Crack 5 eggs into a bowl. Add 25 grams of lactose-free protein powder, a pinch of salt, and a pinch of black pepper. Whisk vigorously until well combined and frothy (1 minute).

Heat 5 milliliters of olive oil in a non-stick pan over medium heat (1 minute). Add the spinach and sauté until it just wilts, about 1 minute (1 minute). Remove spinach from the pan and set aside.

Pour the whisked egg mixture into the same pan. Let it set for about 30 seconds, then gently push the cooked egg from the edges towards the center, allowing the uncooked egg to flow underneath. Continue cooking and gently folding until the eggs are mostly set but still slightly moist, about 3 minutes (3 minutes).

Gently fold the sautéed spinach into the scrambled eggs (30 seconds).

While eggs are cooking, wash and slice the apple (2 minutes).

Divide the scrambled eggs and sliced apple between two plates. Serve immediately.
