Instructions

Step 1: Dice the onion and thinly slice the cabbage.

Step 2: Heat olive oil in a non-stick pan over medium heat. Add ground chicken and cook, breaking it apart, until browned and cooked through, about 4-5 minutes. Season with salt and pepper.

Step 3: Push chicken to one side of the pan, add diced onion and sliced cabbage to the other side. Sauté for 3-4 minutes until softened.

Step 4: While vegetables are cooking, whisk eggs in a small bowl with a pinch of salt and pepper. Pour eggs into the pan with the chicken and vegetables. Scramble until cooked to your liking. Mix everything together before serving.
