Spinach50 g
Whole Grain Bread40 g
Olive Oil1.5 ml
Salt1 pinch
Black Pepper1 pinch

Instructions

Step 1: Wash and roughly chop the fresh spinach.

Step 2: Heat olive oil in a non-stick pan over medium heat. Add spinach and sauté until wilted, about 2-3 minutes. Remove spinach and set aside.

Step 3: In a bowl, whisk eggs with salt and pepper until well combined.

Step 4: Pour eggs into the same pan (add a tiny bit more oil if needed). Scramble gently until cooked to your liking, about 3-4 minutes.

Step 5: Fold the wilted spinach into the scrambled eggs. Toast the whole grain bread slices.
