High-Protein Scrambled Eggs with Cottage Cheese, Mushrooms & Spinach

Ingredients (Serves 2)

Egg3.5 large
Cottage Cheese50 g
Mushroom75 g
Spinach50 g
Olive Oil5 ml
Salt1 pinch
Black Pepper1 pinch

Instructions

Step 1: Slice mushrooms and finely chop spinach. Mince garlic and ginger.

Step 2: Heat 5ml olive oil in a non-stick pan over medium heat. Add mushrooms and sauté for 3-4 minutes until softened. Stir in spinach and cook until wilted, about 1-2 minutes. Season with a pinch of salt and pepper. Remove from pan and set aside.

Step 3: In a bowl, whisk eggs with cottage cheese, a pinch of salt, and pepper.

Step 4: Heat the remaining 5ml olive oil in the same pan over medium-low heat. Pour in the egg mixture. Cook, stirring gently with a spatula, until eggs are just set but still moist, about 3-5 minutes.

Step 5: Fold in the sautéed mushrooms and spinach. Serve immediately.
