Egg4 large
Cottage cheese150 g
Spinach100 g
Protein powder15 g

Instructions

Whisk eggs and protein powder together in a bowl until well combined.

Heat a non-stick pan over medium heat. Add spinach and sauté for 2 minutes until wilted. Remove from pan and set aside.

Pour egg mixture into the pan. As eggs begin to set, gently push cooked portions to the center, allowing uncooked egg to flow underneath.

When mostly set but still moist, stir in cottage cheese and wilted spinach. Cook for another 1-2 minutes until eggs are cooked to your liking.

Serve immediately.
