High-Protein Scrambled Eggs with Chicken Breast & Spinach

- Spinach75 g
- Olive Oil2.5 g
- Salt0.5 tsp
- Black Pepper0.3 tsp
- Egg White125 g
- Whole Egg75 g
- Whole-grain Bread50 g
- Chives1 tbsp
Instructions

Dice the chicken breast into small cubes. In a non-stick pan, heat 2g of olive oil over medium-high heat. Add the diced chicken and cook for 4-5 minutes until browned and cooked through. Remove from pan and set aside.

In a bowl, whisk together egg whites and whole eggs with salt and pepper until well combined.

Add the remaining 3g of olive oil to the same pan over medium heat. Add the spinach and cook until wilted, about 2 minutes.

Pour the egg mixture into the pan with the spinach. Stir gently with a spatula, scraping the bottom of the pan to create curds. Once the eggs are mostly set but still slightly moist, stir in the cooked chicken and chopped chives.
